My name is Jennifer Mora and I grew up in the Atlanta, Georgia area where my family has deep roots in the American South. I am working on my first cookbook of veganized Southern food. Recipes will be modern and healthy focused on pre-fast food days for inspiration and guidance.
I have always loved to eat and cooking developed into a serious hobby in my mid-20′s. I did not consider the health effects of my diet until my mid-30′s and drastically changed it and my lifestyle. During that decade, I had gained and lost about 60 pounds. Prior to my weight loss, I ate my fair share of bacon, fried chicken, pulled pork sandwiches and butter was never a better friend. After the weight loss, these items were crossed off my list but I continued to eat animal products. It wasn’t until my early 40′s that I became an ethical vegan. Having been an animal lover, I finally made the connection of “why love one but eat the other”. If you have ever seen a video of a piglet playing with a dog, it is a very disturbing thought that you would eventually eat one of them. There were other experiences where I observed sentience in non-human animals, animals that people normally eat (cows, goats and chickens). At first, I was angry at myself for not seeing it all along. Then, I began to constructively channel that frustration into developing these recipes. Eating a vegan diet is not inherently healthy but it is generally more nutritious than the standard American diet (SAD). So, I aim to bring both to the plate in the best way that I know how and hope that you enjoy them.
